Key Lime Cashew Bars

Yummy, tart and perfect for summer! This dessert is a healthy alternative to the usual key-lime pie.

 

Ingredients:

Crust:
3/4 C raw almonds
1/2 C coconut shavings, unsweetened
2 Tbs Honey
few dashes of salt

Filling:
2 C cashews
1/2 tsp vanilla
1/4 C coconut oil, melted
3 limes (juice and zest)
1/4 C honey
splash of almond milk

 

Method of Prep:

  1. In a food processor or blender combine all crust ingredients and mix on high until sticky.
  2. Divide crust between 2 mini loaf pans, pressing the crust down with your fingers on the bottom and slightly up the sides of the pan. Set aside
  3. Combine all filling ingredients in food processor or blender and mix on high until smooth and creamy. This may take several minutes depending on the strength of your machine. Add almond milk as needed to thin out the mixture
  4. Pour filling into prepared loaf pans and place in freezer for 2 hours or until solid.
  5. Remove pie from freezer 15 minutes before serving. To remove from loaf pan, cut the corner of the loaf pan and tear the sides away
